About a calendar week has gone by in the master fermenter and the initial vigorous bubbling of the yeast converting sugar to ethanol and C dioxide has probably subsided and the lower-ranking ferment can begin .
During the primary ferment , a creamy cap forms on the top of the beer ( and sometimes take to the woods through the airlock if your brew is particularly vigorous ) . This cap and the debris floating in the wort such as number of texture , hop etc . settles to the bottom of the fermentation watercraft along with dead barm cell . This ooze at the bottom is sleep together as the trub ( or Richard Henry Lee in wine fashioning ) .
If you leave the beer on the trub for too long , it can pass on off note into the beer .
How do we battle this ? Well , once the primary agitation has subside which is usually around seven days ; the beer is transferred into another uninfected and sanitized fermentation vas and seal off with another airlock and go forth to ferment again .
The length of time you leave the beer to work in the subaltern depends on the type of beer you are make . Some recipes call for a week , some ten twenty-four hour period . Barleywines or lagers for instance , can be in the secondary for a month to six workweek .

Cleaning a carboy
As discussed inEpisode 1of this serial , there are lots of fermenters available and bet on what you are adding ( or not tote up ) at this stage can influence your choice in vessel . In the featured image , you may see toasted oak chips in the carboy which are to impart an oak nip to my Scottish weighty beer however , I will have to swirl out the chips and get creative with a chopstick and the carboy skirmish ; but I need to expend the glass carboy as the secondary to obviate any off notes and to free up the buckets for more beer !
In another representative , if you have a set of hop to sum up at the petty fermentation stage for flavor and aroma ( this is phone dry hopping ) ; a trash carboy may not be the best alternative for your petty container because of the narrow neck and it will be punishing to clean house although there are carboy washables setup available to bribe , I am assuming that as a novice home brewer you may have a carboy skirmish at best to clean the equipment with . For a beer which is heavy on the teetotal hopping , you may choose a formative fermentation bucketful instead as your secondary fermenter . I have Quaker who brew and they only use plastic fermentation buckets for each degree of their brewing .

If you have n’t think it by now , beer qualification involve a circumstances of cleaning . lave the lowly fermenting vessel , air lock , stopper ( bung ) if your vas need one and rack cane with spicy soapy water .
